It's hard to pick a favorite as depending the mood I am into this changes.
A list of songs that have been favorites sometime:
Witch Hunter Robing - Op and Ed
Serial Experiments Lain - Op and Ed
Ergo Proxy - Op
Claymore - Op
Blood+ - Op (the song called enegie can't recall which order was it)
Guren Lagann - Op
Some of the more pop oriented ones:

School Rumble op 1,2 and ed 1
One piece OP 1
NGE Op
And many more I enjoyed
