I propose Oh! My Goddess.

Despite being a fantasy, romance, slice-of-life genre, the series has very interesting interpretations of physics and engineering. The vehicles and robots are always really well designed, and are based of its actual functionality. I also find Fujishima's interpretation and combination of Norse Mythology and sub-atomic theories very interesting (Urd the Destroyer arc, the movie, the "neutrino arc" etc.) He does make a lot of references to Super String Theory, and used it quite correctly as well.

Survival genre (doomsday type of deal) also generally have pretty good physics reference, where people would actually die if fall from height, etc. I know it's basic, but it's often overlooked.

Overall though, scifi is definitely the genre that slaughters any type of science the most out of any genre. Not so much because of blatantly ignoring some physical laws, but more so because they often takes some physical laws, and bend it way out of shape.
