Tank!, Cowboy Bebop's opening theme.
The Real Folk Blues, Cowboy Bebop's ending theme.
Blue, Cowboy Bebop's finishing theme (as in, the song played as the series ends).

Those are certainly among my top 5, and as they're all taken from the same series, I thought i'd mention it.

Other than that, there's Basilisk's opening, Bleach's 2nd opening and Wolf's Rain's ending that I can think of at this moment.
